pineapple casserole

My Aunt Linda made this pineapple casserole for Thanksgiving, and CJ loved it.  I've made it several times over, and it disappears fast.  I'm not sure who I should credit with this recipe, but I have seen a Paula Deen version out there.  Anyway, CJ highly recommends this recipe.

Pineapple Casserole

2 20 oz. cans pineapple chunks, drained
1 C. sugar
6 Tbsp. flour
1 C. shredded cheddar
1/2 C. melted butter
1 C. Ritz cracker crumbs

Mix first four ingredients into a baking dish (I've found a 2 1/2 qt. round dish works best, but a 9x13" dish will work too).  Combine melted butter and crackers and sprinkle over top.

Bake at 350 degrees for 30-45 minutes.
