I think I have this reputation of not being a cook or a good cook at that. Yes, there have been a few kitchen disasters (chocolate chili seemed like a good idea), but overall, I don't think I'm a terrible cook. Being impatient though, I just have to be in the mood.
CJ insists that he really doesn't need a meal prepared every night -- which is good, because I don't cook every night. When we do have a hot meal, I always know I've hit a home run if he goes back for seconds and thirds, and then cleans out the dish the next morning.

While we're on topic, I guess I should also ask for suggestions on how to fill up a hungry husband during the day. Whereas I stock up on Lean Cuisines to take to work (and supplement with fruit, vegetables, and a Special K bar), that won't fill CJ up. Short of making him about five peanut butter and jelly sandwiches, does anyone know of any good, easy, filling recipes I can whip up for him to take to work? (Please! It'd help our eating out budget greatly.)
And furthermore, does anyone have any good one-person recipes to share? I'm home 2-3 nights a week by myself, and I'm not exactly going to fix myself an entire lasagna to eat. I've found some helpful recipes in the Hungry Girl cookbooks. Any other suggestions?

Make a meatloaf and send meatloaf sandwiches with him. Meatloaf is almost always better leftover anyway! Don't get fancy, just use the basic Betty Crocker recipe and put a good barbecue sauce on top.
Also, get in the mood some weekend and make multiple casseroles that include rice, noodles or potatoes. Those are inexpensive foods that will stretch your budget. Package them in CJ-sized portions in freezer bags. Throw them in your freezer and he can pull them out as he needs them.
